India’s top Chefs Showcase Culinary Skills at Chitkara University

Chandigarh (Punjab) [India], July 29 (ANI/NewsVoir): Chitkara College of Hospitality Management, Chitkara University, Punjab, hosted a US Cranberry Culinary Training Program today.
The event featured live cooking demonstrations by renowned Indian chefs, who displayed their innovative culinary techniques using the star ingredient of the day-cranberry.
The program began with a lamp-lighting ceremony and introduction of the esteemed panel, which included Chef Sanjeev Kapoor, Celebrity Chef Rakhee Vaswani, Mixologist Shatbhi Basu, Chef Abhijit Saha, Celebrity Chef Harpal Singh Sokhi, Chef Yogesh Utekar, Chef Vikas Seth, and Chef Vishavdeep Bali.
To discuss the nutritional aspects of the recipes, Dr Amarjot Kaur Grewal, Professor and Associate Head; and Dr Gulsheen, Assistant Professor, Chitkara College of Pharmacy, were also present.
Speaking about the event, Sumit Saran from US Cranberries said, “Cranberries are packed with nutrients and antioxidants and our esteemed chefs have put this fruit to the test. They will incorporate this superfood into both sweet and savory delicacies, and the audience will have the opportunity to witness the step-by-step preparation.”
Celebrity Chef Sanjeev Kapoor, who is a renowned Indian chef and television personality, stated, “The pandemic has highlighted the importance of maintaining a healthy diet. This beautiful berry has immense potential for innovation in Indian cuisine. In line with Indian flavors, I have prepared the Besan and Cranberry Burfi.”
Celebrity Chef Rakhee Vaswani, a culinary expert who leads Palate Culinary Studio and Palate Culinary Academy, created a unique Liquid Cranberry Cheesecake.

Next, Mixologist Shatbhi Basu, India’s first female bartender, crafted colorful mocktails such as Cranberry & Kokum Medley and Bay Bliss.
Chef Abhijit Saha, Founder & Managing Director at Ace Hospitality & Consulting and Guest Judge of Master Chef India, prepared a flavorful dish of Arroz con Vino Tinto y Arandanos (Asparagus spears, almond and parmesan).
Celebrity Chef Harpal Singh Sokhi, owner of The Punjabi Tadka and host of the cooking show Turban Tadka, brought regional flavors to life with his Cranberry Malai Chicken Tikka dish, while Chef Vikas Seth, an alumnus of IHM Mumbai, prepared Cranberry Som Tam Rolls.
Dr Madhu Chitkara, Pro Chancellor of Chitkara University, expressed her gratitude to the esteemed panel for their insightful session. She stated, “At Chitkara University, we are committed to providing our students with the best opportunities the industry has to offer.”
Chef Ajay Kumar Krishna, Dean of Chitkara College of Hospitality Management, added, “This event provided our students with a unique opportunity to learn from the best in the country. They were able to witness the visionaries firsthand, which will surely inspire them to explore their potential and creativity.”
