Beshbarmak, which means “five fingers” in translation, is a beloved dish of many. It is especially popular in Navoi region, where it has become a tradition for locals to make it according to a special recipe. The dish usually consists of sun-smoked ram meat (known as “sur gusht”), beef, camel meat, and “qazi” – horsemeat sausage. As a sign of respect for the guest, a boiled ram’s head is usually served along with it.
